A Blackburn problem

Caterer first, or venue first?

Blackburn has few very large rooms, and some venues use their own kitchen only. If your heart is set on a particular caterer, check which venues they can work in before you book either. If you have found the venue first, ask whether it allows outside caterers, what kitchen space there is, and whether it charges a kitchen fee.

If the wedding is in Bolton, Preston or Manchester, ask your Blackburn caterer about travel costs and how they keep food hot on the way. Get the arrival time and set-up time written into the booking, so the venue knows when to open the kitchen.

HMC and HFA

Halal certification: what HMC and HFA allow

Independent bodies certify halal meat, and families hold different views on their standards:

  • HMC answers "No" when asked whether it certifies stunned meat or poultry: "Part of our criteria is that animals are not stunned" (HMC FAQs). It monitors the outlets it certifies and publishes a list of them.
  • HFA requires hand slaughter and prohibits captive bolt and percussion stunning, but allows "controlled electric stunning with minimal amperage, verified by a veterinary surgeon, for poultry and ovine meat" (HFA).

Service style

Buffet or served at the table

Most large Blackburn walimas use one of two service styles. A buffet lets guests choose and suits a hall where people arrive over an hour. Table service, with dishes brought to each table in sharing platters, feels more formal and keeps elders seated, but needs more staff.

Ask your caterer which they recommend for your venue and numbers, and how the price changes. For a buffet, ask how many serving lines they set up for 500 guests and how they keep the queue moving. For table service, ask how many servers per table and how quickly the second round of naan arrives.

Tasting, staff and crockery

Tasting. Taste your menu, not a sample of their best dishes. Ask whether the fee comes off your bill.

Staff. Ask how many servers and chefs they bring, for how long, and who handles a second sitting.

Crockery. Some caterers include serving ware, crockery, cutlery, glassware and linen. Others hire them in or use disposables. Ask who pays for breakages.

Hygiene and allergens. Caterers must register with their council (GOV.UK). Check the 0 to 5 rating at ratings.food.gov.uk, and ask how they give information on the 14 major allergens (Food Standards Agency).
