Gujarati

Biryani and dal, samosas, bhajia, kheer and lighter curries. Hindu Gujarati families often want an all-vegetarian menu.

Pakistani

Karahi, pilau, seekh kebab, lamb on the bone and naan. The standard walima spread.

Punjabi

Tandoori grills, makhani sauces, paneer, sarson da saag in season.

Bangladeshi and Kashmiri

The family caterer question

Plenty of Bolton families book the caterer who fed every cousin's wedding. That can be the right call, but check three things:

  • The venue will let them in. Some venues use their own kitchen only. Confirm before you book either one.
  • They can do your numbers. A caterer who is brilliant for 250 at a community hall may struggle with 700 in a hotel suite.
  • The paperwork is current. Hygiene rating, insurance and halal certificate, whatever your history with them.

If they pass all three, a caterer who already knows your family's taste is worth a lot. Give them your date as soon as you have it, since one caterer can only be in one hall on a Saturday night.

HMC and HFA

Halal certification: HMC or HFA?

Independent bodies certify halal meat in the UK, and their standards differ:

  • HMC. Asked if it certifies stunned meat or poultry, HMC answers: "No. Part of our criteria is that animals are not stunned" (HMC FAQs). It also monitors the outlets it certifies and lists them on its website.
  • HFA. Requires hand slaughter and prohibits captive bolt and percussion stunning, but allows "controlled electric stunning with minimal amperage, verified by a veterinary surgeon, for poultry and ovine meat" (HFA).

Two kinds of catering

Home events and hall events

Many Bolton weddings start with events at home: a dholki, a mehndi, relatives staying for days. That food is often drop-off: large pots delivered hot, served by family, with disposable plates. The walima or reception in a hall is served catering with staff, crockery and a set time.

Price them differently. Drop-off catering is usually charged by the pot or by the head with no staff, and served catering covers the people who run the day. If one caterer does both, ask for two separate quotes so the walima price doesn't absorb the home events, and ask who collects the pots.

Tasting. Taste the exact dishes you plan to serve. Ask if the fee comes off your final bill.

Staff. Get the number of servers and chefs, their hours, and who clears and resets between sittings.
